Before we answer this question let us take a look at how ionizing hair dryers work. These dryers are nothing but the same old hair dryer, except that they incorporate a new technological advancement which is the ionizing feature. How this works is, there is a small piece of metal inside the appliance that gives out ions (charged particles in local parlance) when electricity is passed through it.
Usually even the normal hair dryers give out ions, but these ions are positively charged. The problem with positively charged particles is that they tend to make the hair rough and coarse which is why people who like to blow dry their hair a lot will find that their hair is getting coarser by the day. Negatively charged particles however do two things.
Firstly they bond with the water droplets on your wet hair breaking them down to 1/50th their usual size. Because they break the water down to such a small size, it enables the cuticle of the hair to absorb the water into them, moisturizing them and giving them a shine or glow that you will be very hard put to achieve in any other way.
The second advantage of using the ionizing hair blower is that they tend to dry out the hair up to 50% faster than if you use a ordinary one.
Now that the science of the blow dryer has been put away, to answer the question, yes they are really worth the extra that you pay. If you are losing a lot of hair or have really coarse hair and are having to follow expensive treatment to set it right, the ionizer is almost a God send. Most times when you have coarse hair is only due to prolonged use of the hair dryer and the ionizer not only reduces drying time, it also moisturizes your hair.
The only thing that you need to keep in mind is that you can get ionizing blow dryers for as low as or you can pay double or even three times as much for some of the branded ones. There is really no difference in the way that they work and what you pay is more for the brand than for the working.
